The substitute for any wine really depends on the way you’re going to use it. If the recipe simply calls for de-glazing then a good choice would be water, some type of acid like lemon juice or vinegar. But if the dish has wine as one of the main ingredients then it’s better to choose something like high quality white or red grape juice and simply add vinegar to up the acidity. Another interesting option would be to mix beetroot juice with sugar and lemon juice if you really don’t want to use grape products. A great substitute for dry white wine is apple cider vinegar diluted with water to the desirable consistency.
